The Le Cimate winery was born in 2011 out of Paolo Bartoloni's desire to embark on a new adventure, in the wake of the traditional passion for wine-growing that has always characterised his family, dedicated to agriculture since 1800. In fact, three generations of Bartoloni family members took part in the construction of the winery: his grandfather Cavalier Paolo, who dedicated his life to agriculture, having also been president of the Colli Spoletini cooperative winery for more than 20 years; his son Engineer Giovanni, who had the courage to believe in this investment by building one of the most modern wineries in the area; and his grandson Paolo, the owner of the winery, who dedicates his life to wine by taking care of the Le Cimate winery.Paolo Bartoloni chose to name his project 'Le Cimate', taking inspiration from the name of the hilly area where the winery is located. In fact, it is situated at the top of a splendid hill with a panoramic view of the Martani mountains and the town of Montefalco, one of the most evocative settings in the heart of Umbria.

One of the secrets of the goodness of the wines is the soil, which is silt-clayey in nature, moderately calcareous, deep and cool with a south-eastern exposure and a planting density of 4200 plants per hectare. Part of the vineyard is a slightly sloping terrain where St. Clare of the Cross, who lived around 1300 A.D., is said to have grazed one of her flocks of sheep; in ancient times there was a water spring, which has now disappeared, where she watered her beasts while she prayed. The Saint's words are described as 'a fire, by which the minds of all who heard her were enlightened, consoled and kindled'.

Production focuses mainly on the area's typical denomination wines: Montefalco Sagrantino Secco and Passito DOCG and Montefalco Rosso DOC for red wines; great importance is also given to the area's great whites, in particular Trebbiano Spoletino, vinified today in three different variants that are part of the Spoleto Trebbiano Spoletino DOC. In addition to wine, the winery produces extra virgin olive oil, hazelnuts and hazelnut cream.

The winery's philosophy has always been to give space to the values of tradition, but with an eye on innovation and technology: a mix of elements that allows the best possible management, guarantee and control of the quality level of the wines.


La cantina Le Cimate, nata nel 2011 e gestita da Paolo Bartoloni, sorge a pochi km da Montefalco, nel cuore dell'Umbria. L'azienda produce i tipici vini di qualità del territorio: Montefalco Rosso DOC, Montefalco Sagrantino DOCG, Trebbiano Spoletino DOC.
Productive process

La cantina è dotata della più alta tecnologia presente sul mercato; impianto di cernita manuale per la selezione dei cru, impianto di riscaldamento e raffreddamento dei serbatoi e dei locali attraverso un sistema touchscreen; serbatoi per la stabilizzazione tartarica fino a -6 °C. È interamente autosufficiente dal punto di vista energetico grazie a pannelli fotovoltaici integrati nel tetto che producono 65 Kw/h.

La vigna si estende su 23 ha di superficie, gestiti con sistema di agricoltura convenzionale, ponendo sempre grande attenzione al rispetto per l'ambiente e per i vitigni stessi. Sono infatti ridotti al minimo gli interventi meccanici e l'utilizzo di prodotti di sintesi. La vendemmia è svolta sempre in maniera manuale in modo da garantire la selezione dei grappoli migliori. 

La cantina potrebbe produrre circa 250’000 bottiglie, avendo una capacità di stoccaggio di 2.700 ettolitri di acciaio e 500 hl di legno, ma ad oggi la produzione raggiunge, per scelta, solo le 100’000 bottiglie, puntando sulla selezione dei grappoli e sulla qualità.

La barricaia e la bottaia sono composte dai migliori legni sul mercato, in particolare Rovere di Slavonia e Rovere di Allier. Due impianti di filtrazione e la linea di imbottigliamento (1.600 btg/h) completano il quadro.
