The company
The company was born out of Luciano Baldassarri's passion and deep respect for the Umbrian territory, which he bequeathed to his children: Sonia, Paola and Ernesto.
The company is based in Collazzone, while the vineyards also extend to neighbouring municipalities such as Todi, Deruta and Montefalco.
The Baldassarri family bases its production on a philosophy of wines that are clearly recognisable and best represent the regional wine and food culture.

Productive process
The winery is equipped with the most modern oenological equipment. Cantina Baldassarri's strengths in terms of oenological technology are:
- The red grapes are conveyed into the stainless steel vinificators, directly by gravity, as they are positioned at a lower level than the grape unloading room. This allows less friction and less lees to be produced.
- Racking is carried out by means of trolleys and lifting belts and not by pumps or gears. This causes the fermented marc to undergo a softer treatment with less lees production.
- In white winemaking, the must coming out of the pneumatic press naturally and statically clarifies inside tanks equipped with a cooling band and totally insulated. This allows less oxygenation of the product and better decantation at a controlled temperature, thus avoiding unwanted fermentation starts.
- The presence of cold and heat in all the tanks in the cellar and inside the ageing and packaging rooms makes it possible to maintain the desired temperature constant throughout the year.
