The pork butcher's trade is an ancient craft and Umbria, in particular, has managed to make it a true culinary art renowned since Roman times. We will visit a prestigious farm in the area to learn its secrets: history and anatomy of the pig, basic pork-cutting techniques, meat processing up to the production of sausages, meat preservation and salting. At the end of the workshop, a well-deserved tasting* of our work! The package includes 2 nights' accommodation in a 3* farmhouse / hotel with breakfast included and a welcome dinner in a restaurant selected by us, drinks included.

BOOKING METHODS

Request confirmation of availability of services and payment of a deposit of 30% of the total amount of the package upon confirmation and payment of the remaining balance 25 days prior to arrival. For bookings made during the 25 days prior to arrival, the full amount of the package will be requested upon confirmation.

  • Work kit, ingredients and expert cook for the cookery workshop;
  • Registration and practice management fees with cancellation insurance included;

Travelling program: 

DAY 1 - Accommodation at your farmhouse, Spello on your own (suggested visit). Back to your farmhouse, enjoy a traditional welcome dinner. 

DAY 2 - Large breakfast at your farmhouse and Assisi on your own (suggested visit); in the afternoon cooking lab in a prestigious farm with delicious tasting. Back to your farmhouse.

Visit to Spello - Welcome Dinner
Arrival in Umbria scheduled after lunch, accommodation in a 3* agriturismo / hotel and, in the afternoon, visit of Spello on your own (visit recommended).The Porta Consolare marks the entrance to Spello or, as Julius Caesar called it, the Splendidissima Colonia Julia, an enchanting village of Roman origin, listed among the most beautiful villages in Italy, thanks to its rich environmental, cultural and artistic heritage. Spello still preserves traces of its historical past with its ancient walls and Properzio Towers protecting Porta Venere, another access point to the town. The church of Santa Maria Maggiore can be reached by strolling through charming alleys and ancient streets, along which flowered balconies overlook the town and which, with the passage of time, have become true symbols of the town, and still remain one of its most sought-after attractions. The church houses an artistic treasure inside: the Baglioni Chapel, with Deruta majolica floor tiles and frescoes by Pinturicchio. Spello also boasts a rich Pinacoteca and, just outside the walls, a marvellous museum complex known as the 'Villa Dei Mosaici', which has unearthed 500 square metres of precious mosaics whose central theme is the grape harvest and wineAt approximately20:30, welcome dinner in a restaurant selected by us, drinks included. After dinner, return to accommodation and overnight stay.

Ancient art of pork butchery" cookery workshop with tasting - Visit to Assisi
Breakfast at an agriturismo/hotel and then we reach a prestigious farm for a cooking workshop on the ancient art of pork butchery, followed by a final tasting.The norcino is a very ancient craft, and Umbria, in particular, has managed to make it a true culinary art renowned since Roman times. We will visit a prestigious farm in the area to learn about the history of pork butchery: the history of the pig, the anatomy of the pig and basic cutting techniques, from the processing of meat to the production of sausages, and the preservation and salting of meat. At the end of the workshop we will enjoy a delicious lunch where we will taste the products we have made, other typical Umbrian products, and see the results of our work!In the afternoon, visit Assisi on our own (visit recommended). Return to accommodation, free dinner and overnight stay.

Visit of Perugia - Departure
Breakfast at the agriturismo/hotel, check-out and before leaving we suggest a visit to Perugia on your own (visit recommended).Perugia is the Umbrian capital that represents many cities in one, all fascinating and all full of history. Among the many monuments, incredible works of art, Etruscan remains and the green countryside, the symbol of Perugia par excellence is probably the Fontana Maggiore with its marble basins decorated with sculpted bas-reliefs. Then there is the Etruscan arch, an enormous gateway to ancient Perusia with travertine blocks. Other buildings to admire include the Palazzo dei Priori (now the Town Hall), the Palazzo del Capitano del Popolo or di Giustizia, the palace of the old University, Palazzo degli Oddi Marini Clarelli, Palazzo Sorbello, Palazzo della Penna, and the Rocca Paolina.
